Today marks the first day of my 31-day clean eating challenge! I went to the grocery store last night + started to prep some of my meals. The items that I bought were:
sweet potatoes
strawberries
shredded brussel sprouts
avocados
bananas
boneless, skinless chicken breast tenders
nonfat plain yogurt
flax seeds
natural peanut butter
whole grain bread
extra virgin olive oil
whole wheat pasta
canned tuna in water
canned chicken in water
When I got back home +unpacked everything, I began to prep my yogurt mixture that I started the day off with. This consisted of:
2 1/4 cups nonfat plain yogurt
1 cup oats
1 tbsp. chia seeds
1 tbsp. flax seeds
I let this sit in the fridge overnight + cut up a bunch of strawberries + set them aside in a container. This morning, I scooped out some of the yogurt mixture, added a splash of almond milk (to thin out the consistency) + topped it off with some of the fresh strawberries. It was a great way to start my morning; packed with omega-3 fatty acids + soluble fibers.
