Hump Day Update

Hey there! It is now the 3rd day of the clean eating challenge + I’m feeling great! Many times, it is very difficult the first few days/week since your body can go through a series of “withdrawals” from the processed, sugary foods we tend to eat. Luckily, I wasn’t too off-track before this, so I haven’t had any issues with headaches or hunger. The biggest challenge for me has been prepping my food and making sure I have enough meals for the day. Even though I love to cook, it makes for a very long day after work + a workout. I have been thinking of new ideas to make this part easier + different clean recipes so that I don’t get too bored of the same thing.

I started my morning off with a very easy, delicious + clean breakfast – banana oat pancakes!

Ingredients:

  • 1 banana

  • 2 eggs

  • 1/3 cup oats

Directions:

  1. Mix ingredients in blender until smooth.

  2. Over low-medium heat, cook pancakes until golden.

So so simple and so yummy. I topped mine with strawberries + 100% maple syrup! Enjoy!
